This go-to gravy recipe goes great with any gravy-friendly dish, like our creamy onion mashed potatoes or neat loaf.

- 2 C vegetable broth
- 1/2 C flour (unbleached all purpose)
- 1 C mushrooms (crimini) (sliced)
- 1/2 C yellow onions (diced)
- 3 garlic cloves (minced)
- 2 Tbsp soy sauce
- 2 Tbsp vegetable oil
- 3/4 tsp thyme (dried)
- 1/2 tsp salt
- 1/2 tsp black pepper
Combine all of the ingredients in a medium saucepan; bring to a boil over medium heat, and then reduce the heat and simmer for 5 to 10 minutes or until thickened, stirring constantly.
Store covered in the refrigerator for up to one week.
