Ingredients
- 2 C quinoa cooked
- 1 C black beans canned, drained and rinsed
- 1 tomato chopped
- 2 green onions sliced
- 1 garlic clove minced
- 2 Tbsp cilantro (fresh) chopped
- 2 tsp olive oil
- 2 tsp lemon juice
- 1/8 tsp salt
- 1/8 tsp black pepper

Instructions
Cook the quinoa according to package directions.
In a large bowl, combine all of the ingredients.
Recipe Notes
You can serve this salad warm or cold. You can also add red bell pepper, carrots, corn, or other veggies and/or spices to the salad.
Cover and store for up to five days in the refrigerator.
