Instructions
  1. In a large pan, combine the sugar, water and orange juice; over medium heat, cook the sugar mixture until the sugar is dissolved.

  2. Using a candy thermometer, continue to cook the syrup over medium heat without stirring until the temperature reaches 234 degrees F (the soft ball stage).

  3. Remove from the heat and whisk in the chocolate until well blended; stir in the orange zest and walnuts.

  4. Spread the fudge into a foil-lined 8 x 8-inch baking pan; chill until set. Turn out of the pan, peel off the foil, and cut into 1" squares.
