Try this meatless version of the classic BLT sandwich.

- 4 slices wheat bread (toasted)
- 8 slices bacon (meatless)
- 4 tsp mayonnaise (eggless)
- 1 oz Romaine lettuce
- 1 tomato (sliced)
In a medium pan, cook the meatless bacon strips according to the package directions.
Spread the lightly toasted bread with the mayonnaise (1 teaspoon on each slice); add the "bacon," tomato and lettuce.
You can add a slice of cheese, if desired. You can also use arugula, spinach or other greens, or smoky flavored tempeh or other meatless bacon.
