Instructions
  1. Lightly spray a large saute pan with cooking oil and heat over medium high; add one tortilla, the cheese, beans and the rest of the ingredients; top with the second tortilla.

  2. Cook the filled tortilla until lightly browned and heated through (and the cheese is melted); carefully flip over the tortillas and cook the other side. Remove from the heat, allow to set for 5 minutes, and slice the quesadilla into four wedges.

Recipe Notes

If desired, serve with sour cream, salsa, and/or guacamole.

You can also add corn, red bell pepper, green chilies, or other ingredients to the tortilla.
