  • 3 T olive oil
  • 2 C mushrooms (Crimini)
  • 1 C mushrooms (Shitake)
  • 3 green onions
  • 2/3 C yellow onions
  • 3 garlic cloves
  • 2 T basil leaves (fresh)
  • 1/2 C wine (white dry)
  • 2 C rice (Arborio uncooked)
  • 1/4 t salt
  • 1 t black ground pepper
  • 1 t thyme (dried)
  • 1/4 C buttery spread
  • 2/3 C Parmesan cheese (non-dairy grated)
