For the stuffing:

  • 12 manicotti shells
  • 12 oz. meatless hamburger crumbles
  • 2 t olive oil
  • 2 T yellow onions
  • 1/2 t salt
  • 1/2 t oregano
  • 1/4 t marjoram
  • 1/4 C parsley (fresh)
  • 12 oz. tofu (extra firm water packed)
  • 1 C mozzarella cheese (non-dairy)
  • 1/2 C Parmesan cheese (non-dairy)
