Ingredients
For the veggie mixture:
  • 8oz fettucine(boiled and drained)
  • 2tsp olive oil
  • 2 garlic cloves(minced)
  • 1C mushrooms (crimini)(sliced)
  • 1C yellow onions(sliced or chopped)
  • 1C bell pepper (green)(sliced)
  • 1/2C carrots(sliced)
  • 1 1/2C zucchini(sliced and halved)
  • 1tsp basil (dried)
  • 1/2tsp oregano (dried)
  • 1/4tsp salt
  • 1/4tsp black pepper
  • 1/4tsp red pepper(crushed)
For the cream sauce:
  • 2tsp olive oil
  • 1C soy milk
  • 3/4C Parmesan cheese (non-dairy grated)
Instructions
  1. Saute the vegetables in the oil over medium heat until slightly tender; add the spices.
  2. Cook the pasta according to the package directions; drain / rinse with cool water.
  3. Prepare the cream sauce in a medium pan over medium heat until thickened and bubbly. Toss the pasta with the cream sauce and top with the veggie mixture.

Cover and refrigerate for up to one week.
