Ingredients
  • 1tsp olive oil
  • 1/4C carrots(shredded)
  • 1/4C yellow onions(minced)
  • 1 garlic clove(minced)
  • 1/2tsp salt
  • 1/4tsp black pepper
  • 8oz spinach leaves (baby)
  • 1 green onion(minced)
  • 1/2C sour cream (non-dairy)
  • 1/4C mayonnaise (eggless)
  • 1tsp worcestershire sauce(vegan)
  • 1/2tsp lemon juice
Instructions
  1. In a small pan, combine the olive oil, carrots, onion, garlic, salt and pepper; cook until the vegetables are tender.
  2. Steam the spinach until cooked; drain, cool, and chop the spinach.
  3. In a medium bowl, combine all of the ingredients; refrigerate for at least two hours before serving.
Recipe Notes

Serve with vegetables, chips or bread sticks.

Cover and refrigerate for up to one week.
