Ingredients
  • 1/4C buttery spread
  • 1C yellow onionschopped
  • 1 garlic cloveminced
  • 1C couscousuncooked
  • 2C vegetable broth
  • 2Tbsp parsley (fresh)chopped
  • 1/4tsp salt
  • 1/4tsp black pepper
  • 1/4tsp sage (dried)
  • 1/4tsp thyme (dried)
Instructions
  1. In a large pan, melt the buttery spread. Add the onions and garlic, and cook until tender, approximately 10 minutes.
  2. Stir in the couscous and vegetable broth; bring to a boil. Remove from the heat, cover and allow to stand for 5 minutes.
  3. Add the parsley and seasonings to the mixture.

Cover and store in the refrigerator for up to one week.
