Ingredients
  • 1C wild rice blend(uncooked)
  • 1 3/4C water
  • 1Tbsp olive oil
  • 1/2C red onion(chopped)
  • 2 celery stalks(chopped)
  • 1C mushrooms (crimini)(sliced)
  • 2 garlic cloves(minced)
  • 3Tbsp teriyaki sauce
  • 2tsp chili powder
  • 1/2tsp cumin
  • 1/2tsp black pepper
  • 15oz black beans(canned drained)
  • 4oz green chiles(canned diced)
Instructions
  1. Wash the wild rice; add the rice to boiling water and reduce the heat. Simmer until the liquid is absorbed, approximately 40 minutes.
  2. In a large pan, saute the onion, celery, mushrooms and garlic in the olive oil until tender.
  3. Add the teriyaki sauce and spices to the vegetable mixture; stir and heat thoroughly, and then mix in the cooked rice, black beans, and green chilies.
Recipe Notes

You can also add a chipotle chile, corn or other ingredients to this casserole.

Cover and store for up to one week in the refrigerator.
