Ingredients
  • 1 1/4C flour (unbleached all purpose)
  • 3/4C granulated sugar
  • 3/4tsp baking soda
  • 1/4tsp salt
  • 3/4C soy milk
  • 6Tbsp buttery spread
  • 1 1/2 egg replacer
  • 3/4tsp vanilla
  • 1/2C raisins
  • 1/2C walnuts(finely chopped)
  • 1/2Tbsp orange zest
For the frosting:
  • 1/4C buttery spread
  • 2 1/4C powdered sugar
  • 2 1/2Tbsp orange liqueur
  • 1/2Tbsp orange zest
Instructions
  1. In a large bowl, beat together all of the cake ingredients for 30 seconds on low speed; beat for several more minutes on high speed, scraping the bowl occasionally.
  2. Pour the cake batter into an 8 x 8-inch baking pan (greased); bake at 350 degrees for 30 to 40 minutes or until a wooden pick comes out clean when inserted into the middle of the cake.
  3. Prepare the frosting by creaming together the buttery spread and sugar; add the orange liqueur and zest, and beat until light and fluffy.
  4. Allow the cake to cool, and then frost the cake with the orange frosting.
Recipe Notes

Double this recipe and bake in two 9-inch cake pans for a layered round cake.

Cover and store for up to one week.
