Ingredients
  • 16oz cream cheese (soy plain)
  • 12oz tofu (silken soft boxed)
  • 1C granulated sugar
  • 1tsp vanilla
  • 1/4C lime juice
  • 2tsp lime zest
  • 2Tbsp corn starch
Instructions
  1. Prepare the graham cracker crust.
  2. Combine all of the ingredients in a blender and mix until smooth.
  3. Pour the filling mixture into the crust; bake at 350 degrees for 50 to 60 minutes or until the top turns slightly gold brown and cracks.
Recipe Notes

Cool and then refrigerate overnight before serving.

If desired, top with sliced kiwi, strawberries and/or other fresh fruit.

Cover and store in the refrigerator for up to two weeks.
