Ingredients
  • 1 egg replacer
  • 1/3C honey
  • 1Tbsp yogurt (non-dairy plain)
  • 1Tbsp buttery spread(melted)
  • 1/2tsp vanilla
  • 1C coconut(unsweetened grated)
  • 4oz chocolate chips (semi-sweet)
  • 1Tbsp flour (unbleached all purpose)
  • 1tsp lemon zest
  • 1/2tsp cinnamon
Instructions
  1. In a medium bowl, combine the egg replacer (beaten), honey (or agave), yogurt, buttery spread and vanilla.
  2. Add the remaining ingredients and mix until well combined.
  3. Using tablespoons, form 1 tablespoon of the mixture into rounds on baking sheets lined with foil or parchment foil; bake at 350 degrees for 20 minutes or until lightly browned.

Cover and store for up to two weeks in the refrigerator or in a cool location.
