Try this vegan version of a great breakfast standard.

Ingredients
  • 6slices wheat bread
  • 1C soy milk
  • 2Tbsp flour (unbleached all purpose)
  • 1Tbsp nutritional yeast
  • 1tsp granulated sugar
  • 1tsp vanilla
  • 1/4tsp cinnamon
  • 1/4tsp nutmeg
  • 1/4tsp salt
Instructions
  1. Combine all of the ingredients except for the bread in a large shallow bowl or pie plate.
  2. Dip the bread slices into the soy milk mixture; cook in a large lightly oiled pan until browned, flip and cook the other side until browned.
Recipe Notes

Serve with syrup, berries or other topping.

Cover and store for up to three days in the refrigerator.
