Ingredients
  • 1/2C buttery spread
  • 6Tbsp brown sugar(packed)
  • 1/2 egg replacer(yolk)
  • 1C flour (unbleached all purpose)
  • 1/2tsp vanilla
  • 4oz chocolate chips (semi-sweet)
  • 1/2C coconut
Instructions
  1. Cream together the buttery spread and sugar; add the egg yolk replacer and beat until light and fluffy.
  2. Stir in the flour, a very small pinch of salt, and the vanilla to make a moist crumbly mixture.
  3. Pat the mixture firmly into an 8 x 8-inch baking pan (greased); bake at 350 degrees for 15 to 20 minutes or until golden brown.
  4. Sprinkle the crust with the chocolate chips while the crust is still hot; spread the melted chocolate over the crust, sprinkle with the coconut, cool and cut into bars.

Cover and store for up to two weeks in the refrigerator or a cool location.
