Ingredients
  • 2 1/2C flour (unbleached all purpose)
  • 1/2C granulated sugar
  • 1/2C brown sugar(packed)
  • 3 1/2tsp baking powder
  • 1tsp salt
  • 3Tbsp vegetable oil
  • 1 egg replacer
  • 1C walnuts(chopped)
  • 1 1/4C banana(mashed)
  • 1/3C soy milk
Instructions
  1. In a large bowl, mix all of the ingredients by hand for 30 seconds.
  2. Pour the batter into a 9-inch loaf pan (greased); bake at 350 degrees for 50 to 60 minutes or until a toothpick comes out clean after inserting it into the middle of the bread loaf.

Cover and refrigerate for up to one week; freeze for up to six months.
