  • 2-1/2 T olive oil
  • 2 Garlic cloves, minced
  • 8 oz. mushrooms (sliced)
  • 2 C fresh broccoli (in pieces)
  • 2 T flour (unbleached all-purpose)
  • 1 C soy milk (or other plant-based milk)
  • 1-1/2 C cheddar cheese (plant-based, shredded)
  • 1/4 C bread crumbs
  • 1/4 C Parmesan cheese (plant-based, grated)
  • 1/4 t salt
  • 1/4 t black pepper
